1/2 C onion diced1/2 C celery diced1/2 C red bell pepper diced1/2 C mushrooms diced1/2 C spinach1 TBSP extra virgin olive oilone can tuna drained1 can heart healthy cream of mushroom soup1/2 C water2 slices whole wheat toast or cracked wheat sour dough
saute onions and celery in oil until onions are translucent add mushrooms cook until they are soft add spinach and pepper cook until spinach is wilted
add soup, water and tuna to the pan cook until hot
toast bread pour tuna mixture on top
