sweet potato panckaes

Ingredients
4 large white sweet potatoes1/2 tsp salt4 cloves garlic, minced1 tsp sweet paprika1 tsp red pepper flakes1/2 cup finely grates asiago cheese1 large egg4 egg whites3/4 cup whole wheat flour1/4 cup applesauce2 Tbsp Mayonnaise
Directions
Preheat oven to 450.
grate potatoes, place in colander with salt, let stand 15 minutes and then squeeze out as much moisture as possible. Combine all the ingredients in a large bowl and form 24 small pancakes squeezing out any excess moisture as you go.
Place the pancakes on 2 baking sheets lined with parchment paper. Roast 15 minutes, flip and roast 15 more until browned.
