Momma's Christmas Cheese Ball

Ingredients
2- 8oz packages cream cheese, softened to almost room temperature1 1/2 cups crushed pineapple, drained thoroughly and squeezed1/2 cup minced fresh green bell pepper1/2 cup minced fresh onion1 cup finely chopped pecans
Directions
1. Soften cream cheese on counter until almost room temperature.
2. Thoroughly drain pineapple through a fine mesh strainer. Squeeze out all juice.
3. Mince the onion and bell pepper. You want really small pieces.
4. Using an electric mixer, mix pineapple, onion and bell pepper thoroughly into cream cheese.
5. Refrigerate for 15 minutes while you finely chop the pecans.
6. Remove cream cheese mixture from refrigerator and form into a ball.
7. Roll the cream cheese ball in the pecans to coat.
8. Chill well, and you are ready to serve.
