Pepper Steak with Quinoa

1 ½ pound · Sirloin steak (1/2 inches strips)1 tablespoon · Paprika2 each · Garlic cloves, crushed2 tablespoon · Olive Oil1 cup · Sliced onions2 each · Bell peppers, sliced2 large · Tomatoes, diced1 cup · Beef broth¼ cup · Water2 tablespoon · Cornstarch2 tablespoon · Soy sauce3 cup · Hot cooked rice
1. Season steak with paprika and rest at room temperature while preparing remaining ingredients.
2. Sautee crushed garlic, add steak, and brown gently. Careful not to burn the garlic.
3. Add sliced onions and bell peppers. Continue to cook until vegetables are wilted.
4. Add diced tomatoes and beef broth.
5. Cover, and simmer for about 45 minutes.
6. Combine water, cornstarch, and soy sauce.
7. Stir into steak and cook until thickened.
8. Serve over 3/4 cup freshly cooked quinoa.
