Tuna Noodle Casserole

Ingredients
4 ounces brown rice pasta3 Tbs. breadcrumbs2 Tbs. unsalted butter1/2 cup finely diced onions1 1/2 c. finely diced mushrooms2 Tbs. flour1 tsp. fresh thyme or 1/3 tsp dried1/2 tsp. white or black pepper1 1/2 cup milk12 ou. canned tuna1/4 c. Swiss cheese2c. frozen peas and carrots
Directions
1. Preheat oven to 350 degrees. Prepare and 8 x 10 baking dish with non-stick cooking spray. Cook the noodles according to directions.

2.Place the butter in medium saucepan over moderate heat. Once butter is melted, add onions & mushrooms. Cook for about 2 mins. Sprinkle flour over vegetables and stir to combine; cook for 1 minute. Add thyme, then pepper. Add milk. Stir until mixture comes to a boil, then reduce and simmer 2-3 minutes.

3. Add tuna, cheese, peas and carrots, and noodles to the pan and stir and combine. Transfer to prepared baking dish and top with breadcrumbs. Bake 15 to 20 minutes until bubbly. Serve warm.
