1 red onion, cut into chunks1 medium sweet potato, peeled and diced1 bunch fresh beets, peeled and diced2 medium zucchini, diced1 cup grape tomatoes2 parsnips, peeled and diced2 T olive oilKosher salt, to taste
Combine all ingredients in a shallow baking dish. Cover with foil and bake at 350 for 45 minutes.
