Cashew Ranch Dressing

1/2 c cashews, soak for 2-3 hours and drain1/4 c. water1/4 c. almond milk1-2 garlic cloves1 Tb fresh parsely1 Tb fresh chives1 tsp dried dilljuice of 1/2 lemon1/2 tsp raw apple cider vinegar1/2 tsp saltfresh ground pepper
1. In a high-speed blender, all everything together except for the parsley, chives and dill until completely smooth. If you like a thinner dressing, add a little water at a time until desired consistency is reached.
2. Add herbs and pulse.
3. Season with salt and pepper. Adjust according to taste.
4. Chill for an hour. Stays fresh for 2 days in fridge in an air-tight container.
Serving Size: Makes about 1 cup (16 1-tablespoon servings)
