Low Carb Cheeseburger Soup

Ingredients
2 lbs. lean ground beef1 lb. bacon2 cups chopped celery2 cups chopped onion1/2 cup chopped carrot2 tsp. basil6 cups chicken broth2 cups chopped broccoli2 cups chopped cauliflower1 lb. cheddar cheese, shredded3 cups heavy cream1/2 tsp. black pepper1/2 tsp. salt1/2 cup sour cream
Directions
Brown the ground beef in a Dutch oven. Drain excess fat. Set aside.

Brown the bacon in the same Dutch oven. Drain the excess fat. Return the ground beef to the pot.

Add the celery, onions, and carrots. Saute until the vegetables are just tender.

Add basil, broth, broccoli, and cauliflower. Cook until the vegetables are just tender.

Add cheese, cream, pepper, and salt. Stir until the cheese melts. Turn off the heat. Add the sour cream. Serve immediately.
