Green Rice

Ingredients
1.5 Cup brown rice uncooked4 C chicken broth1 C chopped onion1 C chopped celery1-2 tsp. minced garlic1 tsp salt1/2 tsp peppersprinkle of red pepper flakes (optional)1 tsp marjoram2 C chopped broccoli 4 oz. 2% milk Velveeta1 6 oz. carton of plain 0% Greek Yogurt1/2 C skim milk
Directions
Spray a 4 quart slow cooker so rice won't stick. Put in brown rice and chicken broth, celery, onion and spices. Cook on high for 2-3 hours or low for 4-5 hours. If rice is done, add broccoli, cheese, yogurt and milk. Stir well and put lid back on. Cook for 30 minutes more or until cheese is melted and rice is smooth. Put on keep warm setting until ready to serve.

Serving Size: makes at least 8 servings, 1 C each.
