Caribbean Black Bean Sweet Potato Soup

Ingredients
0.5 tsp Allspice0.5 tsp Thyme, ground2.0 tsp Salt2.0 tbsp Olive Oil6.0 tsp Ginger Root6.0 cup Beans, black3.0 tsp unpacked Brown Sugar1.0 cup cilantro (fresh)1.0 cup green onion (fresh)2.0 serving Sweet Potato - Medium (Fresh)4.0 serving MEXICAN JALAPENO pepper fresh (1)2.0 serving Onion, White/Red, Fresh (1 Slice- Med 1/8")
Directions
1. sautee chopped onion in olive oil until tender. 2. add chopped jalapeno, ginger, allspice and thyme, sautee for 3 more minutes. 3. add beans, salt, brown sugar and water and sweet potatos, heat to boil, then simmer on low for 30 minutes or until the sweet potato is tender. 4. put one cup of bean/sweet potato mixture into blender. Puree, then stir puree back into the soup. 5. add chopped cilantro and chopped green onion. Serving Size: 13 one cup servings
