Yummy Potato Salad

5 lbs Red potatoes, diced4 hardboiled eggs, chopped4 stalks celery, chopped1 green bell pepper, chopped1 cup No Sugar Added Sweet Relish3/4 Tbsp. mustard3/4 cup Fat-Free Mayo1 onion, finely choppedsalt and pepper to taste
1. Bring a large pot of salted water to boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl.
2. Stir the eggs, celery, bell pepper, relish, mustard, mayo and onion into the potatoes. Season to taste with salt and pepper. Cover, and chill in the fridge for at least 3 hours before serving.
Makes 12 1/2 cup servings.
