Dilled Shrimp Salad with Herb Dill Dressing

Ingredients
Shrimp: 1C Dry White Wine1t mustard seeds1/4 t red pepper flakes2 bay leaves1 lemon sliced1 1/2 lbs. large shrimp, peeled and deveinedHerb Dill Dressing3 T extra virgin olive oil3 T red wine vinegar2 T water2 T fresh chopped basil2 T fresh chopped dill1 t finely chopped garlic1 t dijon mustard1/2 medium onion, choppedSaladL1 large head romaine lettuce4 ripe tomatos, cut into wedges6 mushrooms, sliced
Directions
To make shrimp: Combine wine, mustard seeds, pepper flakes, bay leaves and lemon in large saucepan. Add water to fill pan two thirds full. Bring to boil, add shrimp and cook for 3-4 minutes. Drain and cool. Discard bay leaves.

To make dressing: In screwtop jar, add the dressing ingredients. Shake jar to mix and then refridgerate until chilled.

To make salad: Serve the shrimp mixtureon romaine lettuce leavesand surround with tomato wedges and mushrooms.

    This is a very yummy Phase 1 recipe. I did cheat however and add some sliced ripe avocado (YUM), as you can see from my picture =) - 8/14/11

    I used dried herbs and just halved them, and it was still really yummy!! This is a great south beach phase 1 recipe! - 4/7/10
