1 Eggplant, peeled, halved and sliced2 medium red peppers, sliced.*Peppers, sweet, red, fresh, 2 medium 1 Green Pepper, sliced 1 Medium Onion, sliced1/4 C Olive Oil
Preheat oven to 350 degrees. Place all vegetables in baking dish and drizzle withoil.
Bake 20 minutes, basteing frequently.
Place on serving dish and garnish with fresh basil leaves if desired.
