Cheesy Potato Soup

Ingredients
1 Tbl extra virgin olive oil1 cup chopped carrots1/2 cup finely chopped asparagus1/2 cup finely chopped celery1 cup vadilla onion1/2 cup finley chopped green onions3 clove garlic minced1/2 tsp ground cumin1/2 tsp dried dill weed5 cups diced potatoes6 cups 99 % fat free chicken broth1/2 tsp salt1/2 tsp black pepper1/2 cup flour3 cups 1% milk8 oz. sharp cheddar cheese
Directions
In large pot saute carrots, asparagus, celery, gralic, and onions with olive oil until golden brown. Add potatoes, chicken broth, cumin, dill, salt, and pepper. Bring to a boil. Reduce heat to simmer, cover pot and cook for 30 min or until tender. Meanwhile, whisk together milk and flour in medium bowl until smooth. Next slowly whisk mixture into soup. Cook over medium heat and stir occationaly until soup thickens. About 10 minutes. Add cheese. Stir until cheese is melted into soup.
