Quinoa and Leek Frittata

(preheat oven to 180 degrees)
1. Slice the leek, using the white only, and fry gently in the oil for about 3 - 4 minutes
2. Add mushrooms and garlic and fry for another 2 - 3 minutes. Set aside once cooked.
3. Separately, cook the quinoa as per instructions. Set aside once cooked.
4. Beat the eggs in a large bowl, and add the milk. Then add the parmesan cheese.
5. Into the egg mix, add the cooked quinoa and cooked veg, and add some uncooked (or cooked if you prefer) spinach, with some salt and pepper.
6. Pour this into a recangular dish.
7. Scatter the feta cheese on top.
8. Pop in the pre-heated oven, to 180 degrees for about 30 to 40 minutes.
Serving Size: Makes 4 - 6 slices/servings
