Healthy Chocolate Chip Pumpkin Cookies

Ingredients
3 cups splenda (not the sugar blend type)1 cup grandulated sugar1/4 cup shortening1/4 cup unsweetened applesauce2 eggs4 egg whites1 large can of pumpkin (29 oz)3 cups white flour4 1/2 cups wheat flour3 tsp. baking soda3 tsp. baking powder1 1/2 tsp. salt3 tsp. vanilla extract3 tsp. ground nutmeg3 tsp. ground cinnamon1 large bag (12 oz) semi-sweet chocolate chips
Directions
Mix all dry ingrediants together in a seperate bowl and shift together.

In another bowl cream together shortening, applesauce, splenda and sugar together. Add eggs to wet mixture. After eggs are mixed in add the canned pumpkin. Once well mixed together slowly (1 cup at a time) add dry ingrediants to wet until all mixed together. Add vanilla and chocolate chips and mix.

Place dough on greesed cookie and pat down to spread out. Bake at 375 degrees for 10 minutes. (Time may vary on heat of oven.)

Makes 96 1 Tablespoon cookies.

*Tip: use the lip of the non-stick spray can (pam) to flatten down cookies. Spray the top of the lid so the dough will not stick.
