12 large eggs1 cup chopped red onion1 TB minced garlic (jarred)2 TB olive oil1.5 cups chopped broccoli1.5 cup chopped cauliflower1 cup diced mixed bell peppers8 oz smoked turkey sausage1 cup fiesta blend cheese
saute onions and garlic in olive oil. when onions are starting to become translucent, add other veggies. Cook for about 3 min, stirring occasionally. Slice 12 a package of turkey sausage into thin coins, and add to mixture. Continue cooking for 4 or 5 minutes until veggies are tender and sausage is heated through. Beat eggs and add to skillet. Cook, lifting edges for egg to run under mixture, stirring if necessary. Eggs are done when glossy and a little wet looking. Remove from stove and sit for 5 to 7 minutes since eggs will continue to cook for several minutes.
