Zucchini, spinach, mushroom egg white quiche

Ingredients
8 egg whites1 3/4 C skim milk1 small zucchini, sliced2 C bay spinach1 can (4 oz) mushrooms1 Tbsp olive oil1 Tbsp garlic powder1 Tbsp chives1 C mozzarella, part-skim
Directions
Heat oven to 350. Heat olive oil in a skillet. Add zucchini and saute for 3 minutes. Add spinach, mushrooms and garlic powder. Saute until spinach is wilted. Pour vegetables into a greased pie plate. Sprinkle 1/3 cup mozzarella over vegetables. Mix egg whites, milk and chives and pour over vegetables. Sprinkle with remaining cheese. Bake 20-30 minutes until a knife inserted into center comes out clean.
