Cauliflower Cheese Soup

Ingredients
I head of cauliflower2 Tbsp of butter2Tbsp chopped onion2 cups of low sodium chicken broth2 cups of 1% milk90 grams of grated cheddar cheese
Directions
Boil cauliflower in water until soft, drain. Melt butter and lightly fry onions. Add cauliflower and chicken broth and bring to boil, reduce heat and simmer for 5 minutes. Remove from heat and liquify with hand blender. Return to medium heat and add milk. When heated through add cheese and stir to melt. Serve warm.
