Parmesan Basil Salmon

Ingredients

2 tbsp breadcrumbs2 tbsp grated parmesan cheese1 tbsp chopped fresh basil or 1 tsp dried basil1/2 tsp paprika1 dash pepper1 pound of salmon1 tbsp of spray butter1 tbsp of fresh parsley or 1 tsp of parsley
Move oven rack to position slightly above middle of oven.
Heat oven to 375 degrees. Spray rectangular pan,13 x 9 x 2 with cooking spray.
Mix all ingredients except fish, margarine, and parsley.
Brush one side of fish with margarine, dip into crumb mixture. ( I like to do it on both sides)
Place fish, coated sides up, in pan.
Bake uncovered 15 to 20 mins, or until fish flakes easily with fork.
Sprinkle with Parsley!

This is worth to be repeated. Thank you. It's just enough for the 3 of us. My hubby & daughter had a serving & a 1/2. I served it w/ mashed tatters & honey glazed carrots. Thank you. I save the rest of the dry ingredients in a sprinkle container & put in the fridge for future use. - 3/20/10

This was so delicious. I added a tablespoon of lemon juice on the top of the fish prior to adding the dry mixture. I also melted butter place that on the top of the salmon prior to the dry ingredients. I served it with sauté©ed spinach & chickpeas and topped it with some feta cheese and red pe - 12/8/17

Oh my gosh, this salmon is fantastic! I had to use italian bread crumbs cause that is all I had and I sprinkled some of the breading on both sides of the salmon. The old me would have had more than 1 serving, but I was good...only 1 serving. I will be using this recipe very often. - 3/20/17
