Ingredients
100g flaked almonds40g coconut flakes (unsweetened)63g walnuts, chopped62g macadamia nuts, chopped65g raisins50g dried cranberries40g dates, chopped3 Tbls coconut oil2 Tbls extra virgin olive oil8 Tbls honey (runny)2 tsp ground cinnamon (or other sweet spice like ginger)200g rolled oats
Directions
Set dates aside until the end. Mix remaining dry ingredients together. Gently heat and melt the honey and oils before mixing into the dry ingredients. Spread the mixture into two large baking trays and bake at 140C/275F/gas mark 1 approximately 35 minutes or until golden brown, mixing occasionally and respreading evenly. Transfer to a large bowl and mix in the dates and allow to cool completely before storing airtight.
