Ingredients
Vidalia or sweet onions 1/4 cupEVOO 1 tbspCilantroGingerCurry powderGoya Coconut MilkSweet potato Butternut SquashCauliflower
Directions
Cook onions in evoo until tender
Add coconut milk and another can full of water
Add curry and spices to cooking liquid
Add chopped butternut squash and sweet potato
Add cauliflower 5 min later
Summer until cooked
