Vegetarian Borsch

Ingredients
7 c.vegetable broth3 potatoes, cut like fries3 carrots, sliced long1/2 cabbage, chopped2 large beets, cut like fries2 medium onions, sliced semi circles3 large garlic cloves, minced1/2 t. black pepper1/2 can tomato paste2 bay leavessalt to tastevinegar, at the end to taste3 T. olive oil
Directions
Saute onion, garlic, bay leaves, pepper, carrots and beets with olive oil, tomato paste and a little broth to help cook. Cook potatoes and cabbage in broth about 15 minutes. Add beet mixture and continue to simmer till all vegetables are cooked. Add salt to taste.
