Mediterranean Mahi Mahi

Ingredients
1 cup of chopped stewed tomatoes1 tablespoon of olive oil1/2 onion2 cloves garlic1 tsp italian seasoning10 kalamata olives1/4 c white wine1 teaspoon lemon juiceBasil3 tablespoons grated parmesan1 pound mahi mahi fillets
Directions
Preheat oven to 425 degrees. Saute onion and garlic in 1 tablespoon olive oil until softened, about 5-6 minutes. Add 1 cup chopped stewed tomatoes. Cook for additional 5 minutes. Add wine, olives, lemon juice and additional seasoning to taste. Reduce heat, blend in parmesan cheese and cook until sauce is reduced to a thicker consistency. Place mahi mahi fillets in shallow dish and cover with sauce. Bake for 12-14 minutes or until fish flakes easily with a fork. Serve with Quinoa, brown rice or Couscous for a delicious mediterranean meal.
