Peas, Potatoes and Ground Beef Stew

Ingredients
1lb ground beef3-4 cloves garlic, minced2 med onions, chopped5 tbsp oil2 heaping tbsp tomato paste4 cups water1 can peas4-5 large potatoes, chopped
Directions
fry onion and garlic in oil, then add ground beef and brown. once beef is cooked, add tomato paste, and then chopped potatoes, 4 cups of water, cover and let simmer for 30 min or until potatoes are cooked. 3-5 min before potatoes are finished, add can of peas and mix into stew.. Let heat then serve with rice.
Makes 8-10 1.5 cup servings

    Easy to make and I added more peas to get more fiber. Had to add salt to taste and also used lean ground beef. - 8/27/09
