Ingredients
1/2 C finely chopped artichoke1/4 C sliced green onion1 T lemon juice1 tsp olive oil1/2 tsp oregano1/8 tsp Cayenne6 oz white tuna, drained2 Thomas Light English Muffins (split & toasted)6 T shredded Parmesan
Directions
Preheat broiler. Combine first seven ingredients (artichoke-tuna) and spread on four muffin halves, top with cheese. Broil four minutes or until golden.

    Like the oregano and the artichokes added. Great idea to change up a tuna melt. I don't add oil to mix and also have tried different cheeses or even laughing cow light wedges on the muffin or mixed in with the tuna instead of the Parmesan, all good. - 2/27/17
