Cajun Shrimp with Cheesy Quinoa

Ingredients
1 c Quinoa (uncooked)1.14 pounds Raw Shrimp2 tbsp cajun seasoning1 tbsp paprika1 tbsp Italian seasoning2 tbsp butter1 tsp better than bouillon1 c Greek Yogurt1/3 c skim milk3 oz cheddar cheese4 cloves garlic (minced)1 tbsp corn starch1 tbsp Worcestershire sauce
Directions

Serving Size: Makes 8 servings
Cook quinoa according to package directions. Once cooked, while still on the stove, add in milk, 1/2 c of Greek yogurt, and cheddar cheese.

Coat shrimp in spices and sautee in 2 tbsp butter with minced garlic. Remove the shrimp and add chicken stock (or bouillon) and the other 1/2 c of yogurt, cornstarch slurry and Worcestershire sauce bring to a boil for one minute.

Serve shrimp and sauce over cheesy quinoa.
