L.R. pineapple chicken salad

Ingredients
1 lb. boneless, skinless chicken breastslemon-pepper seasoning to taste1 fresh pineapple 4.5 T. olive oil3 T.soy sauce3 T. pineapple juice 1 1/2 T. vinegar1 1/2 T. honey1/2 tsp. ground ginger8 cups assorted vegetables ( lettuce, red onion, carrots, sweet red pepper and broccoli)
Directions
Spinkle chicken with lemon-pepper. Grill over medium-hot heat or broil 4-6 in. from the heat for 15-18 minutes or until juices run clear, turning once. Set aside and keep warm. Peel and slice pineapple, removing core. Set aside. In a jar with a tight-fitting lid, combine oil, soy sauce, vinegar, honey ginger and pineapple juice. Shake well. Brush some of the dressing over pineapple, If pineapple is not sweet enough, sprinkle with a little sugar.; grill or broil for 2 minutes Cut chicken into strips. To Serve, place everything on the table, the chicken, pineapple, dressing and the vegetables in separate bowls. Everyone can take the vegetables that they like and top it with pineapple and chicken. Squirt dressing on top. Enjoy! Makes 4 servings.
