Spelt Pancakes

Ingredients
1.5 c spelt flour (whole grain)1 tsp baking powder1/2 tsp baking soda1 egg1 tsp honey2 tbsp olive oil1 1/4 c milk (any kind you like. water works too)
Directions
Add dry ingredients and mix. Add wet ingredients and mix. I don't measure the wet ingredients but rather add until I like the consistency of the batter. Some people prefer thicker batter and others thinner. Customize to your hearts content!

Pour onto heated griddle and cook until edges dry and bubble appear on top. Flip and cook until golden brown (or however dark you like your pancakes).
