Taco Salad

Ingredients
2 pounds perdue lean ground turkey1 cup reduced fat sour cream8 ounces fat free cream cheese1 cup think and chunky salsa1 cup low fat shredded cheddar cheese1 can yellow sweet corn1 bag lime tortilla chips
Directions
Preheat oven to 400 degrees. In a skillet, brown ground turkey on medium-high heat, set aside. In a separate pan combine sour cream, cream cheese, corn and salsa. In a baking dish, layer salsa mixture and seasoned ground turkey beginning with salsa mixture. Top with shredded cheese and place in 400 degree oven until cheese melts (10-15 minutes). Serve with lime chips - enjoy! (Makes 8 servings)

    I thought this was more of a dip than a salad. It was quite tasty though. Next time I will crumble the chips and bake them in with the dish and serve on lettuce. - 5/18/08

    This was really good! I used 1 lb. ground turkey and added a can of black beans. I make a mexican dish every week because they are so tasty, healthy and simple. I've never made one creamy like this, but it was good. I will make it again and add more salsa. Its a keeper! - 5/13/08
