Shaytard Quinoa Salad

Ingredients
1 box Red Pepper and Basil Quinoa3 mini sweet peppers1.5 cups corn1.5 cups black beans (or chickpeas)1/4 cup chopped fresh cilantro1 medium tomato, chopped3 cloves garlic, chopped fine or minced1/2 medium onionDressing:1/4 cup olive oil1 Tbsp. cumin, dried1 tsp. salt1 Tbsp. lime juice
Directions
Cook quinoa according to package instructions. Put in fridge to cool.
Chop peppers, onion, cilantro, tomato, and garlic into small pieces and put in bowl with beans and corn.
Mix dressing ingredients.
Mix quinoa into chopped vegetables/bean mixture and toss with dressing.
Refrigerate.


Serving Size: makes approx. ten 1/2 cup servings.
