Southwestern 3-bean Salad

Ingredients
1 can black beans1 can red beans (kidney, or small)1 can cannellini beans10oz frozen corn1/2 to 1 cup diced bell pepper(s), preferably red, yellow, orange1/2 medium yellow onion, diced, or one scallion1/2 cup cilantro, choppedDressing:1/4 cup olive oil1/4 cup red wine vinegar1-2 tsp salt2 tsp sugar1/2 tsp ground pepper1/2 tsp cumin1/4 tsp cayenne1/2 tsp chili powder1 Tbsp lemon juice1 Tbsp lime juice
Directions
Combine beans, corn, pepper, onion, and cilantro in bowl

Combine dressing ingredients and blend (whisk, shake, blender)

Pour over salad and combine with spoon

Cover and refrigerate overnight for flavors to blend

Serving Size: Makes 14 1/2 cup servings
