Seafood Brown Rice

Ingredients
Ingredients:2C Birds Eye steamfresh Brown Rice, defrosted2 Stuffed Portabella Mushrooms Imitation Crab chopped, 1C Onion chopped, 1T Olive Oil2T Butter, Cabot Unsalted, 1 Lg Fresh Garlic clove chopped2T Mayo, 1/4 C Water, bottled, 6 oz Lobster (steamed or boiled, meat pieces only),
Directions
Mix lobster meat with mayo in a bowl and set aside.
Heat olive oil in a medium pan on medium heat. Add butter and remove pan from stovetop. Swirl butter in pan until it melts. Return pan to stovetop, add garlic and onion and cook for 5 mins stirring constantly. Add mushrooms, cook and sir for 2 mins. (add a bit of water if mixture starts to stick). Add bag of brown rice and stir into mixture.
Mix lobster meat with mayo into rice mixture.
Incorporate well over low heat. Add remaining water, mix well, heat then eat. Season to taste.

Serving Size: makes 8 1/2 cup servings
