Coffee Slow-Cooker Baked Blacked-eyed Peas

1 lb dried black-eyed peas1 medium onion1 Tbsp oil1/3 cup molasses1/3 cup brown sugar1/4 cup cider vinegar1 Tbsp salt1 tsp black pepper, ground1 tsp each rosemary and thymeother spices to tastewater, to cover by an inch
1. soak dry beans
2. discard soaking water
3. dice and brown onion in oil; add to slow cooker. Add beans, molasses, sugar, vinegar, coffee, salt, pepper, rosemary and thyme.
4. add enough water to cover by an inch or more. Add other spices - chili powder, cumin, cayenne, etc. - taste.
5. cook ~4 hours on high or ~8 on low, or until beans are tender - add more water if necessary.
Serving Size: makes 12 1/2 cup servings
