Italian Chicken

Ingredients
boneless, skinless chicken breast, 6 oz cut into medallionsMushrooms, 3/4 cup Bell Pepper, 1 sliced in ringsyellow onion, 1 sliced in ringsParsley, 1 tbspchopped garlic, 3 tsp Sherry, dry, 1 fl. oz Water, 1/4 cup coarse Salt, 1 tsp cooking spray
Directions
Spray a large skillet with cooking spray. Sprinkle pan with parsley, garlic and salt. Lay Chicken medallions in pan in a single layer and cook on medium for 5 min. Flip chicken over and layer onion, bell pepper and mushrooms on top. Add water and sherry to the center of the pan and place the lid on. Simmer for 10-15 min or until chicken reaches 180 degrees on a meat thermometer. Serve.
