-12 oz Angel Hair Pasta-12 oz baby bella mushrooms -1 1/2 c. chopped carrots (7 oz = 200g)-1 1/2 c. sweet peas (7 1/4 oz = 207g)-1 1/2 c. chopped sweet bell peppers any color or combo (7 3/4 oz = 223g)-1/2 c. sliced fresh basil-3 garlic cloves, minced-1 tbsp. cornstarch-1 1/2 c. low sodium chicken broth- 1/3 tsp salt-5 Roma tomatoes, chopped-1/2 c. grated parmesan cheese
•Cook pasta according to package directions. Meanwhile, in large nonstick skillet, saute the mushrooms, carrots, snow peas, yellow pepper, basil and garlic in oil for 2-3 minutes or until crisp-tender.
• In a small bowl, combine the cornstarch, broth and salt until smooth; gradually stir into the vegetable mixture. Bring to a boil. Cook and stir for 1-2 minutes or until vegetables are crisp-tender and sauce is thickened.
• Remove from the heat; stir in tomatoes. Drain pasta; divide among six plates. Top with vegetable mixture; sprinkle with cheese. Yield: 6 servings.
