1 bunch Saifun noodles (Dynasty brand)1 cup chopped Kale 1 cup shiitake mushrooms in med rectangular chunks1/2 cup frozen green onions2 tsp turmeric powder2 tsp vegetable biryani flavoring powder (Ustad Banne Nawab's brand)1 Tb ground frozen ginger1Tb ground frozen garlic1 tsp dried ginger powderfresh ground pepper to tastesalt to taste2 pinches of chilli flakes 1tsp coconut oil4 cups water
I had pre chopped Kale with small stems. Chop up the mushrooms to 3 in by 1 in pieces. In sauce pan slightly heat oil and add ginger garlic and green onions cook for only seconds. Add the mushrooms sautee till only slightly cooked don't let wilt the add Kale. Cook till Kale gets a darker green but doesn't wilt then add water and all spices tasting as you go to get the right balance. Bring to boil add Saifun noodles and cook until they are only very slightly chewy. You might need more water in the end since the noodles absorb a LOT of water.
