Ingredients
4 - 4oz. Mahi Mahi Fillets1 Tbls. Olive Oil1 tsp. Minced Garlic1/2 White Onion Cubed4 sliced rings of fresh pineapple 3/4 inch thick (center core removed)12 Tbls. Jim Beam Teriyaki Gourmet Marinade1 tsp. tabasco
Directions
In a deep skillet preheat pan on med high heat.
Add olive oil, minced garlic, onion, and teriyaki marinade. Saute for 2 minutes. Add Mahi Mahi fillets and tabasco sauce. Cover the fillets with the marinade mixture. Put a lid on the skillet and let cook covered for 5 minutes. Flip Mahi Mahi fillets over and scoop sauce to cover the fillets once again, replace lid, and cook for an additional 5-10 minutes until fish flakes easily with fork. When fish is done toss in pineapple and cook for an additional minute. If you don't like cooked pineapple just serve fresh pineapple on the side. Serve by itself, or serve it over rice, or serve it with a salad. Recipe makes 4 servings (4 oz. Mahi Mahi, 1 ring pinapple, and 1/2 cup of onions/sauce). Enjoy!!!
