Whole Grain Waffle

Ingredients
1 eggs, beaten (or 1/4 c eggbeaters)3/4 cup skim milk 1/2 cup unsweetened applesauce 1 teaspoon vanilla extract 1/2 cup + 2 Tbls whole wheat flour 1/2 cup oatmeal 2 tablespoons wheat germ 2 teaspoons baking powder 1-1/2 teaspoons splenda or brown sugar splenda or brown sugar1/8 teaspoon salt
Directions
In a large bowl, whisk together the egg, milk, applesauce, and vanilla. Beat in whole wheat flour, oatmeal, wheat germ, baking powder, cinnamon, sugar, and salt until batter is smooth.
Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

    on my 2nd try, the waffles stuck in the waffle maker m- a lot - came out by pieces. I got "stuck" and made nice pancakes! It may be fact that my w.m. is not teflon coated, but this is not usually a problem and I have made many good waffle recipes in it. - 10/8/14

    In hindsight I would've pureed the oatmeal so the batter wasn't lumpy and I would've added cinnamon to mask the nutty flavor. Other than that I would definitely make it again!! Very good. - 5/17/08

    This was wonderful!! I didn't have any wheat germ, and can only imagine how much better that makes it. The recipe was enough to make 7 regular sized belguim waffles. I would consider doubling it to feed more people or to freeze prepared waffles to reheat in the toaster for a later time! :) Thanks!! - 7/6/07
