Tuscan Chicken & White Beans

1 boneless/skinless Chicken Breast, (cut into 4 equal pieces)1 (14oz) can Great Northern Beans1 (28oz) can diced tomatoes; drained2 cups Mushrooms, whole or pieces1/2 c chopped green onion12 baby carrots, chopped1/4 c White Wine1/4 tsp Garlic powder1 tsp Garlic powder1 tsp Italian seasoning, salt & pepper to taste.
Using a non-stick skillet, cook chicken breast pieces in wine with 1/4 tsp garlic; cover & simmer over medium-high until cooked through. Add remaining ingredients; cover & simmer over medium heat for 20 minutes.
*If you're in the mood for more of a soup, add 1/4 cup more wine and 1 cup low fat chicken broth (not included in calorie count)
Serving suggestions:
Serve with zucchini parmesan or other oven-roasted vegetables, and italian bread, if desired
