Wanda's Apple Coffee Cake

5 cups chopped apples1 cup splenda1 cup raisins1/4 cup olive oil2 tsp. vanilla extract1/4 cup egg substitute2 1/2 sifted whole grain flour1 1/2 tsp. baking soda2 tsp. ground cinnamon
Preheat oven to 350 degrees F.
Spray 9x13x2-inch pan
In a large mixing bowl, combine apples with splenda and raisins. Mix well. Let stand for 15 minutes while mixing other ingredients.
Mix oil, vanilla and egg substitute and set aside.
Sift together flour, soda, and cinnamon.
Stir oil mixture into apple mixture.
Add flour mixture to apple mixture about 1/3 at a time just enough to moisten dry ingredients
Turn batter into prepared pan. bake 35 to 40 minutes. Cool slightly before cutting.
Yiels 15 servings 2 1/2-inch X 3-inch piece
