Dirty Rice

Ingredients
3 cups cooked rice1 lb of Sausage (preferably andouille)1 red pepper chopped1 yellow pepper chopped7 stalks of celery chopped1 onion choppedaprox. 3 tbs of cajun seasoningsalt and peper to taste
Directions
Chop the onion, peppers and celery and sauté in a coated pan. Meanwhile start cooking your rice. *Note for more flavor, use low sodium chicken stock instead of water* After rice is started, add in the sausage to the sauté pan to brown. Spice the cooking veggies and sausage with the cajun spices and salt and pepper. After rice is done, fold into the veggie and sausage mixture. Serve as a side item or a whole meal.

    Just what I've been looking for! I'll use the chicken broth instead of water and I'm substituting hot ground andouille style chicken sausage for the pork. Also using a sodium free Cajun seasoning from a recipe I found here. I'll be making this on Sunday to go along with my Creole themed dinner. - 7/11/08
