Stir Fry Beef with Green Beans and Carrot

Flank Steak, Green Beans, Carrots, Marinade ( Soy Sauce Brown Sugar Corn starch Peanut oil) , Sauce ( Rice Wine, Brown Sugar, Soy Sauce, Hoisin Sauce, Sesame seed oil), Aromatics ( Ginger, red chili flakes)
Method
1. Slice the meat against the grain into long strips ⅛-inch thick, ˝-inch wide, and 1˝-inches long.
2. Mix the soy, sugar, cornstarch, and oil until smooth. Add the beef to the marinade and toss until the meat is well coated. Marinate for at least 1 hour.
3. Blanch and shock the carrots and beans in boiling, salted water; rinse, drain, and reserve.
4. In a mixing bowl, combine the sauce ingredients and mix until smooth; reserve.
5. In a very hot wok or sauté pan, add the peanut oil and allow to heat until very faint wisps of smoke arise. Add the aromatics (ginger and red chile flakes) and stir-fry quickly. Add the beef and continue to stir-fry. When beef is cooked, push to the sides of the wok and add the sauce ingredients. Thicken the sauce with a small amount of cornstarch slurry, if necessary.
6. Add the carrots and beans to the beef and sauce mixture and toss until evenly heated.
7. Finish with a small amount of sesame oil, if desired.
