Sourdough Chunk Cookies

Ingredients
¼ cup non-hydrogenated shortening½ cup sugar¼ cup Truvia Baking Blend1 egg¼ cup melted salted butter1 cup sourdough starter (toss-off is fine)1 tbsp vanilla¼ tsp nutmeg½ tsp salt1 ½ cups flour1 ½ cups spelt flour¼ tsp baking powder¼ tsp baking soda2 cups assorted chopped chocolate1 cup chunky granola cereal (I used Love Crunch® Dark Chocolate & Red Berries)
Directions
Beat together shortening, sugar, Truvia and egg until fluffy.
Beat in the egg, then stream in the butter and beat thoroughly.
Add the vanilla, nutmeg and salt, beating well.
Add the flours, baking powder and baking soda, mixing to combine without beating.
Fold in chocolate and granola.
Scoop tablespoons of dough onto lined cookie sheets, flattening slightly. Cover lightly and chill 1 hour.
Heat oven to 350F.
Bake for 12-14 minutes.
