Pork tenderloin with sweet chutney sauce

1whole pork tenderloin about ¾ lb (0.375kg)1 tsp (5 mL) each cumin, coriander½ tsp (2 mL) each garlic powder, paprikasalt and pepper1 Tbsp (15 mL) olive oil1/3 cup (75 mL) mango chutney2 Tbsp (25 mL) pineapple or orange juice
Cut tenderloin into medallions, about 1” (2.5cm) thick. Flatten slightly with your hand. Combine dry seasonings. Rub into both sides of medallions. Heat oil in a skillet over medium heat. Saute medallions until browned, about 4 minutes per side. Combine chutney and juice. Add to skillet, turning pork to coat. Simmer about 2 minutes.

This was such an easy recipe to cook for dinner. I used pork chops, thick ones. I think next time I will put in half the cumin. To me to was too hot. My husband liked it and would like to have it again. He did say not all the time, just once in a while. I think my son will love it!! - 9/7/08
