Sauteed Vegetables & Brown Rice

Ingredients
1 c quick cook brown rice1 c vegetable broth2 t olive oil1 small onion, chopped3 c broccoli florets8 oz baby portabello, sliced1 garlic clove, minced1 t thyme1/4 t black pepper1/4 t salt
Directions
Prepare rice using broth
Heat olive oil & onion over medium high for 3 min, stirring often
Add broccoli and cover for 3 min, stirring occasionally
Add mushrooms and remaining ingredients
Saute until mushrooms are done, about 5 min
