African Sweet Potato Stew

1 cup vegetable broth2 cups water2 small sweet potatoes, cubed1 can chickpeas, drained and rinsed1 - 1 1/2 cups green beans, chopped1/2 cup onion, chopped1/2 cup tomatoes, chopped1/2 cup green peppers, chopped1/2 cup red peppers, chopped2 tablespoons peanut butter 1 teaspoon cumin1/2 - 1 teaspoon crushed red pepper1/4 teaspoon cinnamon1/4 teaspoon coriander1/4 teaspoon fresh grated ginger rootsmall bunch cilantro, roughly chopped
1. Combine water, broth, peanut butter, and spices. Bring to a boil, then reduce to a simmer.
2. Add onions, and simmer 2-3 minutes. Then add sweet potatoes and chickpeas. Simmer another 10 minutes.
3. Add green beans and simmer 5-7 minutes.
4. Add peppers and simmer another 5-7 minutes.
5. Add tomatoes and simmer another 5-7 minutes.
6. Add cilantro, simmer until wilted. Serve warm.
Serving Size: Makes 4 servings of about 10-12 oz each
