Seared Mexican Pork Tenderloin

2 Tbsp. Olive Oil1 lb. Whole Pork Tenderloin1 Cup Chopped Onions4 Cups Hunts Diced Tomatoes w/Green Chili's1 Tbsp. Chili Powder1 Tbsp. Taco Seasoning
Preheat oven to 425. Heat oil in a large skillet (preferably non-stick, one that can endure the oven heat) over med-high heat and sear meat on each side for a few minutes to obtain a nice deep carmelization. Remove the meat to a platter. Add the onions to the skillet and saute them until soft, just a few minutes. Add tomatoes and using a wooden spoon, scrape the bits from the bottom of the pan. Add the Chili Powder and Taco Seasoning and stir well. Place the pork back in the skillet and place on the center rack in the oven for 20 minutes per pound. Tent a piece of foil over the top of the pork and let set for 5 minutes on the counter prior to slicing. Drizzle tomato sauce over the slices to serve.
