Almond Coconut cookies (serving = 3 cookies)

Ingredients
1 cup shredded coconut3 cups almond meal or almond flour or a mix.1 tsp cinnamon1 tsp ground cardamon (or less)1/2 tsp nutmeg1/2 tsp guar gum1 stick butter (1/2 cup)1 tsp vanilla extract2 large eggs3 tbsp honey1 Tbls orange zest (optional)
Directions
Cream butter with guar gum, then gradually add in vanilla, honey, zest, and eggs.

Stir together coconut, almond meal and spices.

Use scoop or make small cookie balls. Press flat before baking.

Drop by tablespoons onto cookie sheet

flatten each one (I use a glass)

Bake for 18 minutes
