Pan-fried New Potatoes with Ham for One

100 grams new potatoes50g Ham, chopped1 tsp. Italian Herbs1 tsp. garlic chips2 Spring onions, chopped4 button mushrooms, chopped1 cup chopped Kale, remove storks
Bring a large pot of water to a boil. Add the potatoes and cook for about 8-10 minutes or until fork tender (do not overcook). Drain and rinse under cool water to stop the cooking process. Pat dry. Slice potatoes lengthwise and then into smaller pieces. Heat frying pan spray with 1-3 sprays of oil. Add the potatoes and ham, herbs and garlic chips, add the onions and mushrooms. Cook for 20 minutes, stirring occasionally. You want a golden brown colour. Add the kale and cook for a few more minutes until just wilted. Serve hot.
